St Patrick's Day Truffle Ingredients
For the truffles:
- 1 package (8 oz) cream cheese, softened
- 1 cup powdered sugar (and more, if desired, for sweeter truffles) - use Swerve confectioner's if you'd prefer to go sugar free.
- ⅔ teaspoon matcha powder
- 2 teaspoons vanilla extract
- Green food coloring (gel food coloring works best)
- Peppermint extract, optional
For the coating:
- 2 ½ cups white chocolate chips. I recommend Enjoy Life brand because they are allergy free.
- 1 teaspoon coconut oil, optional, for smoother drizzle
- A pinch of matcha powder, optional

How to Make Gluten Free St Patrick's Day Green Truffles
To make your green filling:
Using the paddle attachment and a stand mixer, beat the softened cream cheese until smooth. If you don't have a stand mixer, use a spoon or spatula and do it by hand.
Gradually add the powdered sugar, matcha powder and vanilla extract, mixing until well combined and smooth.
Add green food coloring, starting with a few drops, and mix until the filling turns a vibrant green. Adjust the color as needed.
Add a few drops of food grade peppermint extract, if desired. The amount you need will depend on the product you're using and your personal taste.
Scoop the mixture into small balls (about 1 inch in diameter) and place them on a rack or parchment-lined baking sheet. A melon baller is helpful, but optional.
Freeze the truffles for at least 30 minutes, or until firm.
For the white chocolate coating
Melt your white chocolate in a microwave-safe bowl, stirring every 20 seconds until smooth. Stir thoroughly between microwave sessions - this helps melt the chocolate.
If you want to decorate your truffles with green drizzle, reserve some of the melted white chocolate. Mix in green food coloring, adding a few drop or two each time until you reach your desired shade of green.
