Ingredients

2 cups of flour

1 1/2 tsp of baking soda

1 1/2 tsp of baking powder

1/4 tsp salt

2 tsp of ground cinnamon

1/4 tsp of ground ginger

2 eggs, at room temperature

1/2 cup of light brown sugar, packed

1 cup of plain Greek yogurt (I highly recommend Fage)

1 tsp vanilla extract

3/4 cup of almond milk
-
1 medium apple, cored and chopped fairly small

1/2 a cup of mini chocolate chips
Instructions
Adjust an oven rack to the middle position and preheat your oven to 350 degrees Fahrenheit.Combine the dry ingredients (flour - ginger in the list above) in a medium mixing bowl.In a separate medium bowl, beat the eggs, brown sugar, and yogurt on medium speed with a handheld mixer (or really vigorously with a whisk or fork!) until just combined.Add the milk and vanilla extract and beat until just combined.Add half of the dry ingredient mixture to the yogurt mixture and beat to combine, then add in the second half of the dry ingredients and beat to combine.Using a spatula, carefully fold the apples and chocolate chips into the batter.Pour the batter into a greased muffin pan, making sure not to overfill each cup. This batter rises a lot, so leave a little bit of empty space at the top of each cup!Bake until a toothpick inserted into the center of a muffin comes out clean and the tops are slightly golden brown, about 25-30 minutes. Allow the muffins to cool on a rack for 5-10 minutes before removing and enjoying them!
