How to make easy herbed lamb chops
For grill: preheat on medium-high heat.
For pan seared lamb chops: Preheat a cast iron skilled on medium-high heat.
For oven roasted lamb chops: Heat broiler to high.
Lightly brush pan with olive oil or spay with oil. I prefer avocado oil because it has a high smoke point.
In a small bowl, combine fresh and dried herbs, mustard, olive oil, wine, garlic, and salt. Mix well.
Brush mixture evenly over all sides of lamb. A silicone brush is best, but you can spoon the mixture if you don't have a brush.
Place lamb chops on grill or in pan. Grill or broil 4 minutes on each side, cooking to desired degree of doneness.
Medium rare is about 135º F and medium is 150ºF. I use an instant read thermometer to check doneness. Lamb chops are shown medium rare - I cook with lamb I personally raised so I'm fine with eating it medium rare.
