How to make healthy, dairy free Snickers copycat bars
Preheat your oven to 350ยฐF.
Combine the coconut oil and coconut sugar in a large mixing bowl. Use an electric hand mixer to beat the ingredients together until fully combined.

Add the egg and beat again until the egg is fully incorporated. Reduce the speed of your hand mixer and gently whisk in the flour and baking soda.

Press your cookie dough into an 8x8 inch baking dish and bake for 15-20 minutes, or until the edges begin to turn golden brown. Set the pan aside.

Whisk together the almond butter and syrup until smooth and homogeneous. Spread the mixture over the cookie base and then sprinkle the peanuts on top.

Melt your dairy free chocolate chips in the microwave. Be careful not to scorch the chocolate.
Microwave for about 20 seconds, stir, then microwave in 10-15 second intervals. Make sure to stir each time. This helps the chocolate melt evenly.
Spread the melted chocolate over the peanut layer.

Let your bars chill in the fridge for 30-45 minutes, or until the chocolate is completely set.
The photos show the pan sliced into 9 squares, but making the bars half as large is a more reasonable serving size for us.

Serve and enjoy!

Dairy Free Snickers Bars Tips
Start by baking your cookie base for 15 minutes. You can add extra time a few minutes at a time if needed until they are fully baked.
These bars feature a dairy free caramel made from nut butter and maple syrup.
You might not think this would have a very accurate caramel flavor, but it is actually quite similar.
I prefer using almond butter for the best flavor. If you use peanut butter then the peanut flavor will be a little overwhelming.

Coconut sugar is a healthier alternative to brown sugar. If you do not have coconut sugar then you can replace it with light brown sugar.
Your coconut oil does not need to be melted, you just donโt want it to be cold. Cold coconut oil will be very hard to incorporate into your cookie dough and will leave you with big clumps.
If it's cold in your house, you can soften the coconut oil in the microwave.

We like to top our bars with a pinch of flakey sea salt before the chocolate has set. It is an easy way to compliment the richness of the chocolate and balance the sweetness of the caramel.
We like the Enjoy Life or Bake Believe dark chocolate chips, but you can use any dairy free chocolate chips.

You can leave your peanuts roughly chopped like they typically come or crush them into smaller pieces. We tend to leave them roughly chopped so our bars have more of a classic Snickers look.
You can store these bars in the fridge for up to a week or in the freezer for up to 2 months.
Make sure they are stored in an airtight container. If you store your bars in the freezer, you may need to let them sit on the counter for a few minutes to soften before enjoying.

Your caramel mixture should be easy to spread over the cookie base.
If it seems too thick to spread easily you can add a splash of water or extra maple syrup to the mixture.
Don't get almond butter on your phone! Make sure to print out the recipe using the recipe card below:
